Basic Pumpkin Soup & Nuts

Nuts make a nutritious, energy producing snack to replace highly refined carbohydrate shacks. High in healthy fats, vitamins & minerals, nuts can reduce blood cholesterol, lower the risk of type 2 diabetes and improve heart health.

How to toast nuts:

Pumpkin Soup

Using raw nuts of your choice, or a mixture, toast nuts in an ungreased skillet over low to medium heat for 3-5 minutes, stirring often. To toast nuts in the oven, place nuts in a single layer on an ungreased baking sheet & bake at 325 degrees for 10-12 minutes, or until golden but not scorched. Remove from oven and baking sheet to prevent over toasting. Use toasted nuts as a garnish on oatmeal or steamed veggies. Add to stir-fry dished, or popped corn for a nutty flavor.

Basic Pumpkin Soup

  • 12 oz. pureed pumpkin
  • 3 cups broth (chicken or vegetable)
  • 1 cup heavy cream or silken tofu

Stir pumpkin into broth in 2 quart saucepan on medium heat. Add cream (or tofu) continue stirring until mixture is blended and hot, but not boiling. Remove from heat and serve with warm whole grain bread.

For your individual taste, try: chopped onion or garlic; 1 tsp. curry powder or cayenne powder or cumin powder; snipped parsley, cilantro or dill; toasted nuts. Experiment with a variety of flavors to taste the abundance of fall's harvest!
