Good Tasting, Healthy Salad
Healthy Salad
Take an ordinary fresh mixed green salad (no iceberg lettuce) and give it a blast of nutrition by adding some of these ingredients:
- White beans, kidney beans (cooked), or edamame
- Sliced avocado
- Black olives
- Diced, fresh red pepper
- Boiled egg slices
- Pumpkin seeds or sunflower seeds
- Walnuts
- Fresh tomato or onion slices, shredded carrot or red beet
- Include cilantro or parsley in your mixed greens
- Slices of grilled chicken, salmon or lean beef
- Go LIGHTLY on the salad dressing if used
